Hi Ginger – Yes, you could. It would change the flavor, but I do think onions would be delicious as well!

Not a huge fan of fennel but wondering how that might skew the flavor profile.

Hi Joanne – Yes, you could use other cheeses like feta, goat cheese, or even shaved parmesan. Enjoy!

Made it exactly as is, and my guests raved and wanted the recipe. Plus, it is so healthy with the beans, spinach and just lemon juice5 stars

But this had a good cast of ingredients, was high protein and looked very healthy, which is what we’re after lately. I’m so glad I gave it a shot. It’s super quick to prepare, has limited ingredients, and can be used as an actual salad or a main dish. I don’t like those stinky cheeses, so used crumbled feta instead, which was great. (I subsequently found out that there’s a creamy feta which I’ll try to get next time in case creamy matters.) I also used candied pecans, which we loved. It’s fun to have something with fennel in it since I’ve not had fennel much in my life and it’s really good. This was another winner, Lisa! Thanks!5 stars
