Didn’t like it as a child. Didn’t like it as an adult. And still don’t like it in my golden years. Full stop. My husband LOVES ham. It is his favorite meat. Suffice it to say that over the years, I have tried many, many ham recipes. We counted the reject printed ham recipes tonight — Over 100 printed ham recipes that I have kept with a big “NO” scrawled on the page so I would not try the same recipe again. My husband’s employer handed out hams this holiday season. Sigh. Time for another ham recipe. If anyone can make this happen, I knew it would be Lisa! This ham was perfect! My husband said it should have a special “Lisa” name as it is beyond anything he has ever had, including the infamous (and overpriced) storefront honey baked hams. We made a few adjustments: We used a high quality pure maple syrup instead of honey (because maple syrup has a little lower glycemic index than honey and we pay attention to that). We used freshly squeezed mandarin orange juice (because that’s what we had on hand) and also added some of the zest. We
used freshly grated ginger, because we love fresh ginger and also had that on hand, and my ground ginger jar was empty. We also cooked longer than 90 minutes (for an 8.59 lb. room temp ham) as we did not reach the 110 degree temp after 90 minutes (ovens do vary). So we re-glazed 4 times before the caramelize phase. Perfection! Bonus points for easy prep and easy clean-up. The split pea with ham bone soup will be next. You ROCKED this one, Lisa!!5 stars
