Hi Rose – for a 3-pound prime rib, the initial high-heat step is the same regardless of size, so roast it at 450°F for 20 minutes to develop that flavorful crust. After that, reduce the oven temperature to 325°F and continue roasting until the internal temperature reaches your preferred doneness. As a general guideline, prime rib takes about 15 to 20 minutes per pound at 325°F, but I always recommend relying on a meat thermometer rather than time alone for the most accurate results. A 3 pound roast will usually take about 45 to 60 minutes after the initial 20-minute high-heat roast, but start checking the internal temperature early to avoid overcooking. Hope you love it!
